Here are some quick, and yummy energy bites you can take on the go, to work, school, hike, picnic, or just make these and keep it in your car. They will help fight those temptations to the drive thru when you are out and about.
Yields: About 20 2-inch balls
Prep time: 10 minutes
Ingredients
- 3 cups nuts of your choice (whole almond, cashew, walnut, pecan)
- 2 cups pitted dates
- 1/2 cup white or dark chocolate chips
- A spoon of melted butter or ghee (optional
Method:
- In a food processor, add all the nuts. Pulse to crumbly texture, as crumbly or fine as you like it.
- Pour it into a large mixing bowl.
- Pulse the fresh pitted dates until they are finely chopped and come to form a sticky dough.
- Add this to the crumbled nuts. Pour in chocolate chips and combine.
- Grease your hands with ghee and dig in, Form little bite sized balls. Chill in the fridge for about 15 minutes.
- It can be stored in a glass jar on the kitchen counter for unto a week.
- It stays fresh for 2 weeks in the fridge and can be frozen for a month or two. Enjoy!
Note:
- If the mixture feels dry, add a few spoons of honey to bring it to the consistency you like.
- You may substitute chocolate chips with raisins or cranberries.
- You can also press it into a parchment lines pan and cut into squares, small balls are just easy for me to make.
