Dried Fruit and Chocolate Chip Energy Bites recipe

Here are some quick, and yummy energy bites you can take on the go, to work, school, hike, picnic, or just make these and keep it in your car. They will help fight those temptations to the drive thru when you are out and about. 

Yields: About 20 2-inch balls

Prep time: 10 minutes

Ingredients

3 cups nuts, assorted (whole almond, cashew, walnut)

1 cup dried fig or dates

1/2 cup ground flax seeds

1/2 cup whole chia seeds

1/2 cup honey or more

1/2 cup dark, unsweetened chocolate chips

A spoon of melted butter or ghee

Method:

In a food processor, add all the nuts and fig. Pulse to crumbly texture, as crumbly or fine as you like it. 

To this add honey and give it a few quick pulses till it begins to form a crumbly dough. 

Pour this into a large bowl. Add the chocolate chips and combine. Grease your hands with ghee and dig in, Form little bite sized balls. Chill in the fridge for a few hours. It stays fresh for 2 weeks in the fridge and can be frozen for a month or two.

Note

- If the mixture feels dry, add a few spoons of honey to bring it to the consistency you like. 

- You may substitute chocolate chips with raisins or cranberries.
