This is really easy and quick to make, when your hungry stomach daydreams of a golden crisp dosa. Bad thing, the craving will last long after eating it .. so good, it just melts in your mouth. Try it!
What I used: Serves more than 4!
1 and ½ cup fine rava (semolina)
1 cup rice flour
½ cup maida (all purpose flour)
½ tsp cumin
½ tsp hing
Salt and pepper to taste
Few green chilies finely chopped ()optional
1tsp finely chopped ginger
1tsp finely chopped cilantro
1 onion finely chopped
Mix the rava, rice flour, maida, hing, cumin, salt and pepper with 2-3 cups water, enough to make a watery/ very thin batter. Add in the chopped ginger, green chilies and cilantro. Set aside for 10-15 minutes.
Set a flat dosa pan/pancake pan on medium-high heat. When it begins to smoke, wipe the top surface with half an onion dipped in a little oil. This is like a nonstick coating.
Sprinkle a few chopped onion all over the pan, let it roast for a few seconds.
Now using your hand, stir the batter and sprinkle the batter all over the onions on the pan.
Don’t do any retouching. This splattered effect will give you that crispy crunchy texture. Add a spoon of oil/ghee around the edges.
Let it cook on medium-high until golden brown. Fold it gently. Serve hot with chutney. Enjoy!
Tip: You may refrigerate the remaining batter for another day's breakfast or evening snack.
