Cone cakes anyone?


This was a fun way to give it to my kids, on a cone! I should have got bigger cones that fit the cupcake, but this is what I had, so improvised. I made some buttermilk cakes and sour cream chocolate frosting. And this was a fun way to give it to my kids, on a cone! Makes a 2 layered 8 inch cake or 24 regular cupcakes
3 cups all purpose flour
2 cups sugar
5 large eggs
2 tsp. pure vanilla extract
1 cup buttermilk  
1 tsp. baking powder
½ tsp. baking soda
½ tsp. salt
1 and ½ cups (3 sticks) unsalted butter, room temperature
Preheat oven to 350 degree F. Grease and dust 2 8 inch round pans with butter and flour, set aside. If you are making cupcakes, line the baking pan with cupcake papers, set aside.
Sift together flour, baking powder, salt and baking soda; set aside.

In the bowl, whisk together butter, sugar, eggs and vanilla on medium speed until light and fluffy.

Now, on low speed, add 1 a little flour; mix until combined. Add a little buttermilk; combine. Do this alternatively, ending with flour, until all has been incorporated.

Pour it into the prepared pans. Bake until light golden brown and a skewer or knife inserted into middle comes out clean, 25 to 30 minutes. Cool completely before they are frosted.

Sour cream Chocolate frosting 

Serves: Covers 1 round 8 inch cake, or 24 cupcake tops.
3/4 cup bittersweet chocolate
2 tsp dark cocoa powder
1 cup unsalted butter, at room temperature
1 cup confectioners’ sugar
1 tsp vanilla extract
1 Tbsp sour cream
Pinch of salt
Warm the chocolate chips and cocoa together on a double boiler. Stir it until it melts without lumps (In a small bowl over boiling water bath below). Using a cake beater beat the butter until it is light and fluffy. Gradually add powdered sugar, salt, vanilla and sour cream and mix until very smooth. Add chocolate and mix until just incorporated. Do not over churn, let the frosting be thick. Chill for about 20-30 minutes, before frosting/piping it on the cake. Enjoy!
