This is a great salad to prep for your work week!
Serves 4-6
Ingredients:
- 2 cups quinoa, raw
- 1 can of cooked black beans (15oz can/300gms)
- 1 large apple, seeded and diced
- 1 cucumber, diced
- A bunch of cilantro, washed and finely chopped
- 1 carrot, peeled and grated
- 2 boiled eggs or your choice of protein
Method:
Cook quinoa:
- Wash quinoa and drain out water in a strainer.
- Cook in a rice cooker. 1 cup quinoa will need 2 cups water and 1/4 tsp salt.
- Once cooked, let cool. Works best if refrigerated overnight.
For the dressing:
- 1/2 cup olive oil
- 1/2 cup lemon juice
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 tsp minced garlic
- 1/2 tsp sugar
Prep salad dressing:
Mix all the dressing ingredients in a glass bottle, close the lid tightly, and shake well.
Prep salad:
- In a mixing bowl, add cooled quinoa and chopped veggies. Mix to combine.
- Before serving, add salad dressing and combine.
- Top with boiled egg or your choice of protein.
- The salad will stay fresh in an airtight container for up to 5 days. Enjoy!
