Quinoa Black bean Salad

This is a great salad to prep for your work week!

Serves 4-6
Ingredients: 
  • 2 cups quinoa, raw
  • 1 can of cooked black beans (15oz can/300gms)
  • 1 large apple, seeded and diced
  • 1 cucumber, diced
  • A bunch of cilantro, washed and finely chopped
  • 1 carrot, peeled and grated
  • 2 boiled eggs or your choice of protein

Method: 
Cook quinoa:
  • Wash quinoa and drain out water in a strainer. 
  • Cook in a rice cooker. 1 cup quinoa will need 2 cups water and 1/4 tsp salt. 
  • Once cooked, let cool. Works best if refrigerated overnight. 
For the dressing:
  • 1/2 cup olive oil
  • 1/2 cup lemon juice
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp minced garlic
  • 1/2 tsp sugar

Prep salad dressing:
Mix all the dressing ingredients in a glass bottle, close the lid tightly, and shake well. 

Prep salad:
  • In a mixing bowl, add cooled quinoa and chopped veggies. Mix to combine.
  • Before serving, add salad dressing and combine. 
  • Top with boiled egg or your choice of protein.
  • The salad will stay fresh in an airtight container for up to 5 days. Enjoy!
