Here is a simple and quick lunchbox idea for kids and adults!
Makes 8 burritos
Ingredients:
- 2 lb/ 1kg ground turkey
- 1 Tbsp coconut oil
- 1 tsp pink salt
- 1/2 tsp red chili powder
- 1/4 tsp turmeric powder
- 1/2 tsp jeera powder
- 1/2 tsp brown sugar
- 1/2 tsp garam masala powder
- 1 tsp garlic paste
- 1/2 tsp ginger paste
- 2 Tbsp tomato ketchup
- 2 cups red onion, diced
- Juice of 1/2 lemon
- 8 large tortillas
- 2 cups Mexican cheese blend
Directions:
- Place a griddle/deep dish pan on medium-high.
- Add ground turkey and brown for about 5 minutes.
- Pour coconut oil, saute;
- Add the spices, salt, and brown sugar, and saute for 2 minutes.
- Once the spices are aromatic, add ginger and garlic paste, followed by tomato ketchup. Combine and saute on medium-high for 5 minutes.
- Turn off the stove. Add diced red onions and squeeze the juice of half a lemon. Set aside to cool.
- Place a griddle to heat on medium.
- Start assembling the burrito.
- Place a large tortilla on a cutting board. Add 2 scoops of ground meat in the center. Top it with some shredded cheese. Hold the left and right ends of the tortilla, fold them in, and then roll the meat, cheese, and tortilla all together in snug wrap. Follow the video above if it helps.
- Cook the burritos on the griddle. Make sure you turn themall around to brown.
- Pack them or devour them right away; enjoy!
