This is a quick, easy and wholesome pasta dish you can whip up for yourself or your kids lunchbox.
Here is the recipe.
Serves 4
Ingredients:
- 1 lb/ 1/2 kg uncooked whole wheat fusilli pasta
- 4 pork or turkey sausage patties, cooked and chopped
- 2 cups zucchini, chopped
- 2 cups red pepper, chopped
- 1/2 cup red onion, chopped
- 1 Tbsp herb butter or regular butter
- 1 tsp minced garlic
- 1 tsp Italian herbs
- 2 cups red pasta sauce
- 1 cup heavy cream
- 1 cup parmesan cheese
- Salt, pepper and chili flakes as needed
Directions:
1. Cook pasta as directed on the box, drain, reserving a cup of pasta water.
2. Add herb butter and garlic to a heavy pan on medium heat. Toss in the chopped patties and veggies. Sauté for 5 minutes on medium high.
3. Add in the cooked, drained pasta. Add in salt, pepper, chili flakes, dried herbs, red sauce and cream, combine.
4. Cook on low for 3-4 minutes. Let it cool a bit before you add it to your kids lunch box.
5. Top with a generous serving of parmesan cheese. Enjoy!
