Sweet Potato Salad

I had never tried roasted sweet potatoes, must say they were very filling. Slow cooked them on the stovetop with olive oil, salt and pepper. Sprinkled some water and covered to cook for 5 minutes. 

This paired with spinach, carrots, chopped boiled eggs, roasted nuts and cucumbers. Mashed avocado, ranch, salt and pepper to season worked well.
