Cheese Crust Omelette  Recipe

Here is a delicious cheese crust omelette that you can make for breakfast it comes together quickly for weekday breakfasts as well. You may use any shredded cheese of your choice. I have used a Mexican cheese blend.  A side of guacamole will make a great combination. 

Serves 1


  • 2 eggs, raw
  • 1/2 cup shredded cheese 
  • 1/4 cup onions, diced 
  • 1 tsp jalapeño, diced 
  • 1 tsp butter 
  • Salt and pepper to taste 
  1. Place a pan over medium heat. 
  2. Add butter and let it foam. toss in onions and jalapeños; sauté.
  3. Create a ring of shredded cheese around the onions. 
  4. Slowly crack the eggs over the onions. 
  5. Cover and cook on low until the cheese crust is golden brown. 
  6. Serve hot, enjoy!
