Light tiramisu recipe


This recipe uses whipped cream, instead of the traditional mascarpone cheese.  My hubs turned 50 a few weeks ago. We had a low-key dinner as our family back home were sick and no one was in the mood to celebrate. I made this quick little Tiramisu dessert, and he is a big fan of coffee. 





Serves 4
Ingredients:
A pack of vanilla ladysfinger wafers (About 24 pieces)
1/2 cup light cream cheese
1 cup light whipping cream
2 tsp icing sugar
1 tsp vanilla essence
2 cups hot water
1 tsp instant coffee powder
2 tsp sugar
2 Tbsp Cocoa powder or coffee to dust

Directions:
In a bowl add cream cheese icing sugar and vanilla. Whisk until smooth. Add whipping cream and whip until stiff peaks form. Fill it into a piping bag with a nozzle. Set in the fridge. 
In a shallow bowl, add hot water, coffee and sugar. Stir to combine, set aside. 
Place a transparent dish to assemble. 
Start with a base layer of cream, piping dots with the piping bag.
For the second layer, dip the vanilla wafers in the prepared black coffee. Assemble it over the cream layer. 
Top with a layer of cream, then dust with cocoa or coffee powder. 
Repeat another three layers as shown in the video. Refrigerate overnight and enjoy chilled. 


Take a medium serving dish.
