Gluten-free almond brownies recipe

I love these brownies not only because they are gluten free and low carb, they are also a sneaky way to get almonds into my kids diet. They never got to know! I wish I had added more chocolate chips and dark cocoa powder to intensify the flavors. Please feel free to alter as per your liking. Here is the recipe. 


Makes about 20 brownies in a 8x11 inch pan

Ingredients:

  • 2 eggs
  • 1/4 cup melted butter
  • 1 tsp vanilla or 1/2 tsp almond extract
  • 2 cups almond flour or any gluten-free flour of your choice
  • 1/2 cup cocoa powder
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1/2 to 1 cup chocolate chips
  • Cooking spray
  • Cocoa powder and chocolate chips to decorate

Instructions:

  1. In a bowl, whisk eggs, vanilla or almond extract and melted butter. 
  2. To this, add almond flour, cocoa powder, salt and baking powder. Combine together with a spatula. 
  3. Preheat the oven to 325 degree F. 
  4. Spray some nonstick cooking spray to a 8x11 inch baking tray. Add in the batter and spread out evenly. 
  5. Bake at 325 F for 40 minutes or until a toothpick comes out a little crumbly. Remove and cool. 
  6. Decorate with more chocolate chips and cocoa powder. Enjoy!
