Dried fig’n nut vegan energy bites



My husband gets a lot of dried fruit and nut, in little packs, munches on them for a few days, then it sits in the pantry for days, even weeks, without anyone noticing it’s existence. 

So, I decided to put them to use. These energy bites are packed with all the goodness, without sugar. You can make them and store them in an airtight box or in the fridge for a week or two. Here’s the recipe. 

Yields 20-22 truffle sized bites

  • 1 cup rolled oats
  • 3 cups mixed nuts
  • 1 cup coconut flakes
  • 1 cup dried figs, sliced 
  • 2 cups fresh dates, seeded and sliced
  • Pinch of salt

Directions: 

  1. Place the oats in a microwave safe bowl and toast for a minute, set aside. Do the same with nuts, set aside. 
  2. Once they are completely cooled, add them into a food processor along with the coconut, dried figs, and dates. Add a pinch of salt and pulse it down to a crumbly mixture. 
  3. Remove and form bite sized balls. Store in an airtight container at room temperature for a week, or longer in the refrigerator. Enjoy!
