We follow meatless days two to three times a week, Monday in particular. Dal curry is a regular staple on this day. Adding a colorful stirfry or salad makes the meal delectable! This salad is made with crunchy veggies. Apples, cucumbers, carrot, colored peppers and fresh coriander/cilantro leaves. Here is the recipe.
Serves 4
Ingredients
2 apples seeded and diced
1 cucumber roughly peeled and diced
1 carrot diced
A handful of sweet colored peppers, seeded and diced
A cup of freshly chopped cilantro
For the dressing:
2 Tbsp fresh lime juice
2 Tbsp olive oil
1 tsp brown sugar
1/2 tsp salt
1/2 tsp chili powder
1/4 tsp pepper powder
Add all the diced fruit and veggies in a large bowl. Set aside or chill until ready to use.
Mix all the salad dressing ingredients in a small bowl and whisk well to form a uniform mixture.
Drizzle the dressing over the salad when you are ready to eat. Toss and serve. Enjoy!
