Vodkarita popsicles!



Pineapple strawberry vodkarita popsicles

What in the world is a vodkarita? It is a margarita, with vodka instead of tequila. I have used fresh pineapple and strawberries to make this popsicle. By all means you may blend these ingredients and pour them into a drink glass and sip away. But, given the summer heat, what better way to have booze, than in a popsicle?
So here goes...

Pineapple strawberry vodkarita popsicles


Makes 4 popsicles
2 cups fresh or canned pineapple
1 cup fresh strawberries, diced
1 cup ice cubes
1/2 cup vodka ( I used Smirnoff triple distilled vodka)
1/4 cup simple syrup (1 part sugar and 1 part water)

Blend pineapple, vodka, simple syrup and ice together until smooth. Set aside. 
Add a spoon of diced strawberries to the bottom of the popsicle maker tray. Pour the pineapple puree. Top it with more diced strawberries. Add the popsicle sticks, cover and set to freeze. Enjoy! I did :-)
