Pav bhaji recipe - a great way to use up all those veggies in the fridge


If you have a ton of veggies and bread, here is a recipe for you. You may make this recipe with just potatoes and peas, or load it with all the veggies of your choice. This dish is a mild melting pot of spices, veggies and butter.



This recipe serves 6

To make the bhaji, take 6 cups mixed veggies (potato, carrot, bean, pepper, tomato, peas) in a pressure cooker.

Add 1 tsp salt, 1/2 tsp turmeric, 3 cups water, cook till soft.

Use a potato masher or whisk and make a coarse paste of the veggies.

Place a wok on medium heat. To this add 2 tbsp. oil, 1/2 tsp mustard and 1/2 tsp cumin seeds.

Add 1 cup red onions and 1 cup tomatoes. Cook on medium heat until the tomatoes are soft.

Add the following powders:
1 tsp coriander, 1 tsp chilli, 1/2 tsp garam masala, 1/2 tsp turmeric, 1 tsp chaat masala.

Add a tsp of ginger garlic paste, salt and sugar to taste. Cook until the spices are aromatic.

Add the mashed veggies and cook on low for 15 minutes.

Add a generous serving of butter and serve with Pav/buns or bread that is roasted in butter.

Serve Pav bhaji with raw onions, lime wedges, cilantro and green chilies if you prefer. Enjoy!
