This recipe serves 6
Ingredients
4 Tbsp oil2 green chilies, finely chopped
1 cup red onions, thinly sliced
4 cups mixed veggies(beans, carrot, peas, cabbage), chopped
4 cups cooked rice, cold, preferably a day old
1-2 tsp curry powder
1/2 tsp turmeric powder
1 tsp ginger garlic paste ( I usually make a paste of ginger, garlic and turmeric together)
2 Tbsp dark soy sauce
1 tsp white pepper powder
1 tsp salt
Fried rice needs to be cooked on relatively high heat, so have all your ingredients prepped and assembled by the stove before you start.
Heat a wok on medium high heat.
Add oil, when it begins to smoke, add green chilies, followed by onions.
Saute for a minute.
Add in the veggies and saute for 5-7 minutes. Half way through, sprinkle a few teaspoons of water and a pinch of salt. This will keep the veggies crunchy and colorful.
Make a well in the center and add all the powders and soy sauce, stir well until aromatic and mix it all in with the veggies.
Saute on high for just a minute and add rice. Work your hands constantly, combine well. Turn off the heat, Serve hot, Enjoy!
