It's a State Holiday today, so the kids were still asleep. I went into OCD mode. Cleaned the entry way and porch, washed the car and soaped a whole flight of stairs. Came back hungry and opened the fridge, and there were a ton of ripe fruits. So that is what we had for breakfast. Homemade custard and fruits.
Custard recipe
Ingredients:
2 cups whole milk
1/2 cup whipping cream
2 egg yolks
1 Tbsp cornflour
4 tsp sugar
1 tsp vanilla extract
Method:
Combine the milk and cream in a cooking pot and bring to a boiling simmer.
In a large cooking bowl, whisk the yolks with vanilla. Melt the cornflour with 1/2 cup water and get rid of lumps. Add the cornstarch mixture and sugar into the yolk, whisk well.
Now add a little bit of the boiled milk into the yolk mixture whisking constantly, then a little more, whisking well. Repeat this until all the milk is added to the yolk mixture, whisking non stop.
Place it on low heat, stirring gently with a whisk. Once the custard has thickened into a pudding consistency, turn off. Use warm or chilled as desired. Holds good for a few days in the fridge.
After cooking, I directly chilled it for an hour in the freezer, and poured it over fresh fruit. Great yummy breakfast.
