Kids lunch: Mini veggie burgers

Mini veggie burgers made with boiled potatoes, sauted and stir-fried onions, carrots, beans and coriander. Add spices of your choice. Make patties, Dip into egg wash, bread crumbs and shallow fry in a pan on medium heat.

Toast the mini buns with butter. Sandwich them with the veggie cutlets, ketchup, onions, tomatoes and cucumbers if you like. Enjoy!

PS: You can make the Burger filling a day ahead and store in the fridge.. You can also make cutlets as an after-school snack.
