Banana nut brownies


These brownies are loaded with the goodness of dried fruit, nuts and bananas. They are also made with whole wheat, honey and eggs.  You can have them for breakfast, guilt free as well :-)

Makes 1-8 inch square pan
Ingredients:
1 large ripe banana, mashed
2 eggs
1 cup honey
1/2 cup yogurt
1/2 cup cashew, broken into bits
1/2 cup dried fruit (raisins, cherries, tutti-fruity)
2 cups whole wheat flour
1/4 cup cocoa powder
1/2 tsp baking soda
1/4 tsp salt
1 tsp vanilla

Sift the flour, cocoa, baking soda and salt together, set aside.
Add the fruit and nuts to the flour mixture. Toss them all together, lightly. Set aside
Mash the banana, add the eggs, yogurt, honey and vanilla. Combine to form a smooth liquid.
Add the flour mixture to this and fold in with a spatula.
Do not over mix. Fold just enough to combine.
Grease a pan and line it with parchment paper.
Pour the batter and smoothen it out flat. Tap the pan a few times to get rid of air bubbles.
Bake in a preheated oven at 350 degree F or 180 degree C for 25-30 mins or until a tooth pick inserted in the center comes out clean. Let it cool completely before you cut them. Store in an air tight container or in the fridge for upto a week.
