Egg and veggie katti roll


Seriously, these rolls or wraps are loaded with healthy stuff! Whole wheat parathas, eggs, and veggies! They are perfect for on-the-go chauffeur moms/dads and kids alike.

What you need:
6 homemade, whole wheat parathas or store bought naan, or pita breads
6 eggs
Salt and pepper to taste
2 cups red onion julienne
2 cups carrot, cut into strips
2 cups capsicum/green peppers, cut into strips
1 cup of mayonnaise
1 cup of tomato ketchup
1/2 cup butter, at room temperature
6 thick paper tissues, to wrap

Make whole wheat parathas or layered chapatis, set aside. Recipe here.
Prep the veggies. Beat the eggs in a bowl, add salt and pepper to combine. Set aside.

Get a pan heated on medium high. Add 1/2 tsp butter. As it foams, pour a ladle of prepped egg mixture. As the egg bubbles, place a paratha on it and press down to spread the egg evenly, underside.

Flip the paratha and let cook. Remove and let it cool a bit.

Slap on mayo and ketchup on the omelette side. Spread it out evenly. Layer the veggies and roll it down tightly from one end to the other. Wrap it a paper tissue keeping one end open. Pack away into boxes or take on-the-go. Enjoy!
