Coconut burfi - made with coconut, sugar and cardamom!

You can make this sweet two ways - using sugar and coconut, or condensed milk and coconuts.
What you need: Makes about 20 2-inch squares
4 cups fresh coconut, grated
2 cups sugar
1/2 cup water
2 Tbsp ghee


Grease a plate or baking tray lightly with ghee and set aside.

In a  pan on medium heat, add sugar and water. Cook on medium heat, stirring constantly, until it forms and thick syrup, for about 12 minutes.

Once they mixture starts to leave the sides of the pan, add coconut and cardamom powder. Cook, on low heat stirring constantly, so it does not burn. Once it begins to form a dough, pour it on the greased tray; spread it evenly.

Cool and cut into squares. Holds good for a few days at room temperature. If you refrigerate it, the burfi will hold good for up to a few weeks. Enjoy.
