Video recipe: Carrot fry

Here is an easy vegetarian stir-fry made with carrots and cabbage. Its an easy fry to pair with breads. It can be eaten cold, as a salad with yogurt.


Serves 2

Ingredients:
1/2 tsp mustard seeds
1/2 tsp cumin seeds
1 tsp urad dal
1 tsp channa dal
A sprig of curry leaves
1/2 cup red onion, diced
1/2 cup green pepper/capsicum, diced
1 cup carrot, grated
1 cup cabbage, diced
1/4 tsp turmeric
1/2 tsp chilli powder
1/2 tsp amchur/dry mango powder
1 tsp oil/ghee
Salt to taste

Heat 1 tsp ghee/oil in a pan.
When it begins to smoke, add mustard seeds, cumin, dals and curry leaves one after the other.
When the spluttering subsides, add diced onion and capsicum. Saute for 2 minutes.
Toss in the grated carrot and diced cabbage.
Saute on medium high for 4-5 minutes.
Add all the powders and salt, stir to combine. Cook for 3-4 minutes. Turn off the heat. Spread on toasted bread, roll into chapatis or have it cold, as salad along with yogurt. Tastes good either way, enjoy!
