My kids and I love this stir-fry, it is so easy to make, and tastes delicious! I mean, is there any kid out there that would not eat bacon?
To make cooked quinoa:
1/4 cup quinoa
3/4 cup water
Pinch of salt
In a bowl, add all the above ingredients, microwave on high 6-8 minutes. Fluff the cooked quinoa with a fork. Set aside.
1/4 cup bacon crumbs
1/2 tsp minced garlic
1/4 cup red onions, diced
1/4 cup beans and carrots, diced
Salt and pepper to taste
In a pan, on medium heat, saute the crumbs for 4-5 minutes.
When the bacon is crisp, add red onions; saute for 2 minutes.
Add beans and carrots; saute for 3-4 minutes.
Toss in the cooked quinoa, saute 3-4 minutes.
Add salt and pepper to taste; combine. Enjoy as breakfast, lunch or dinner!
