Video recipe: Banana chocolate cake with nuts and raisins

Here is a wholesome, healthful cake made with whole wheat flour, jaggery/raw brown sugar, eggs, banana, raisins, walnut, almonds and cashews! Go on, try it!

Makes two, six inch cakes

6-7 small or 3 large, ripe bananas
2 eggs
1/2 cup yogurt
1/2 cup vegetable oil
1 cup organic jaggery powder/raw brown sugar, packed
1 tsp vanilla extract
1 and 3/4 cups organic whole wheat flour
1/4 cup cocoa powder
1 and 1/2 baking soda
1/2 tsp salt
1 cup mixed nuts, chopped (walnuts, almonds, cashews)
1/2 cup raisins

Preheat the oven at 350 degree F/180 degree C.
Grease and flour dust 2-6 inch baking pans.
In a bowl, peel and mash bananas
Add eggs, vanilla, yogurt and oil. Mix well. Add jaggery powder and combine until the sugar dissolves. Set aside
In another bowl, mix flour, baking soda, salt, cocoa powder, nuts and raisins together.
Mix the dry ingredients into the wet ingredients.
Pour into pans, gently tap to even out the batter.
Bake for 25-30 minutes, or until a toothpick insertd, comes out clean. Cool, dust with powdered sugar, enjoy!
