Quinoa pomegranate salad


A crunchy salad, with colorful pomegranate, carrot, quinoa, cilantro and cucumber. These salads are such a delight to put together. They taste great when they are served chilled.


Serves 4
Prep time: 15 mins

Ingredients
3 cups cooked and cooled quinoa
1 cup cucumber, diced
1 cup carrot, shredded
1 cup cilantro, finely chopped
1 cup pomegranate
1 tsp lemon juice
Salt and pepper to taste

Combine them all together, toss gently, add in salt, pepper and lemon juice. Chill for an hour before serving. It goes great with a dollop of sour cream or Greek yogurt on the side. Enjoy!
