Prep time: 20-25 minutes
1 pound spaghetti
1 pound broccoli cut into bite size pieces
2 handfuls of fresh kale leaves, roughly chopped
2 cups of peas
1 cup red onion, sliced thin
1 tsp crushed garlic
1/2 tsp black pepper powder
2 Tbsp olive oil
Salt to taste
Cook the pasta as per directions on the box ( or bring a large pot of water to a boil, toss in pasta, sprinkle a tsp of salt and cook, stirring occasionally, about 8 to 10 minutes, until al-dente.) Drain, reserving 1/4 cup of the drained water.
While the pasta cooks, in a heavy skillet over medium-high heat, add olive oil.
When its warm but not really hot, add in the garlic and onions. Saute on high for a minute.
Add broccoli and peas, saute for 2 minutes. Toss in kale, stir for just a few seconds. Sprinkle a little salt and pepper.
Add the cooked pasta and toss on high heat for just a minute. If you like it dry, serve as is. If you like it a little moist, pour the reserved pasta water and stir to combine. Serve warm with your choice of grated cheese, or a drizzle of olive oil. Enjoy!
