Yield: Makes 2 cups
1 cup quinoa
2 cups water, or vegetable/chicken broth for added flavor
2 tsp olive oil
1/4 tsp salt
Wash the quinoa seeds in a strainer. Run it through water.
Place quinoa and liquid in a pan or rice cooker; cook. If using a pan, bring it to a rolling boil, reduce the heat to low, cover and let cook for about 12 to 15 minutes until most of the liquid has been absorbed. Fluff with a fork. Enjoy!
