Prep time: 20 minutes Cook time: 10 minutes Total time:
Yield: 4 servings
Ingredients:
4-4oz pieces of salmon
20 cloves of whole garlic, peeled
4 Tbsp olive oil

Dry rub:
1 tsp cayenne pepper
1 tsp roughly crushed cumin seeds
1/2 tsp black pepper powder
1/2 tsp dry mango powder
1 tsp salt

Directions
  • Mix the dry rub ingredients in a bowl and massage it into both sides of the salmon filet. Let it rest for 15 minutes.
  • In a large pan or skillet, on low to medium heat add olive oil. When it begins to shimmer, add the garlic cloves, after a few seconds, place all the salmon filet together.
  • Cook for 4 to 5 minutes on each side until it has a crunchy crust. Turn the garlic cloves occasionally to prevent burning.
  • Once both sides are flipped and browned, turn off the heat. Cover and skillet and let it rest for another 5 minutes.
  • Garnish with mint leaves, and a generous serving of fried garlic cloves. Serve hot. Enjoy!
