Cocoa fruit rum cookies

Cocoa, rum and fruit, all in a cookie. They are great for Christmas cookie giveaway gifts.


What you need: Makes about 30 cookies
2 and 3/4 cups all-purpose flour
1/3 cup unsweetened cocoa powder
3/4 cup butter
1 and 1/4 cups sugar
1 egg
1/4 tsp baking powder
1/2 tsp salt
2 tsp vanilla extract
2 cups dried fruits, candied fruits and nuts of your choice, soaked in 1/2 cup rum overnight.

Whisk together flour, baking powder, cocoa and salt in a large bowl. Beat butter, egg, and sugar with a mixer on medium speed until the sugar dissolves.

Reduce speed to low. Add vanilla, followed by the flour mixture . Once combined, add in the soaked dried fruits and nuts, combine.

Pour the dough on a floured surface and knead gently into a dough. Roll it out into a cylinder or any shape you like, maybe a square or triangle log. Wrap in cling wrap and freeze overnight.

Preheat oven to 325 degree F. Cut the log into 1/2 inch cookies, place on a parchment paper lined sheet. Bake for 8 to 10 minutes. Cool on a wire rack. Store at room temperature for upto 2 weeks. Enjoy!
