What you need: serves 2
1 large cucumber, partially peeled, sliced into rings and halved
2 apples cored, and cut into thin slices and halved
1 cup carrot, grated
A few sprigs of fresh dill, torn up into pieces
For the dressing:
1 tsp apple cider vinegar
1 tsp honey
1/2 tsp chili-garlic hot sauce
1 tsp vegetable oil
Salt to taste
Add all the dressing ingredients into a bowl and whisk it with an egg beater.
Prep the vegetables. Add them into a large bowl. Cover the bowl with cling wrap and let it chill until ready to serve. Add the dressing and toss to combine. Serve. Enjoy!
