Pepper and beet salad

Crunchy, colorful peppers, juicy cherry tomatoes and beets, a colorful salad indeed!

What you need: makes 10 medium servings of salad
4 cups, fresh colorful peppers cut into large chunks 

2 cups cherry tomatoes
2 cups lettuce torn into pieces
2 cups beets, peeled and chopped into thin slices
10 medium plastic boxes
Salad dressing of your choice.

Prep the vegetables. Layer them in ten containers starting with lettuce,  spinach, strawberries and pomegranate. Store in 10 boxes, enough to fuel your weekdays. Add dressing and toss before you serve. Devour!
