Sankranthi Sakkare Acchu - Indian sugar candy

Here are the traditional melt in your mouth sugar candies. They are easy to make, but you require patience, don't be in a hurry.
Prep time: 5 minutes Cook time: 20 minutes Total time: 25 minutes

Yield: makes about 20 candies, about 2 inches each
Ingredients:
1 cup sugar
1/4 cup water
1/4 cup milk
1/4 cup yogurt
candy molds or traditional wooden candy molds
food color


Combine sugar and water in a pan and bring to a boil on medium heat, stirring constantly. One the mixture begins to boil, add about 1/4 cup milk, stirring continuously. Once the mixture is bubbling and frothy, add the yogurt and stir; run it through a strainer,or muslin cloth to filter off any impurities that have skimmed to the surface.


Pour the mixture back into the pan, bring to a boil, add in the rest of the milk. Repeat. Once the mixture combines, it will form a white homogeneous sticky liquid. To test if its ready, pour a few drops of a greased spoon and let it sit. If it hardens in a few seconds, its just about right.

Lightly grease the candy molds. If using wooden molds, soak them in water over night.  Make sure the liquid has no air bubbles. Mine did have bubbles and I let it cook a tad longer :( . Pour into molds. Let it sit for 10 to 15 minutes. Tap the molds gently to get right of any remaining bubbles. Turn over the molds and tap to release the sugar candies. Enjoy!
