Channa/Garbanzo bean and cucumber salad

One of my most favorite salad. Easy to prep; filling and satisfying for lunch.

For the salad:
2 cups garbanzo beans, cooked/canned and drained
1 cup colored pepper, diced
 cup cucumber, diced
1 cup lettuce, diced
1/4 cup red onion, diced

For the dressing:
1/2 cup cilantro, diced
1/2 cup carrots, grated
1/2 tsp cumin/jeera powder
2 tsp olive oil
1 tsp red wine vinegar
1 tsp lemon juice juice
Salt and ground pepper, to taste

Combine all the salad ingredients in a bowl. Combine the dressing ingredients together and whisk for a few seconds. Pour over the salad and toss them together. Chill for an hour before serving!
