What you need: makes 10 medium servings of salad
2 cups, fresh pomegranate
2 cups lightly salted, toasted cashews
2 whole carrots shredded with a peeler
2 cucumbers, cut into 1 inch pieces
2 cups of lettuce torn into 2 inch pieces
10 cups of fresh baby spinach
1 cup red onion sliced into thin rings
10 medium plastic boxes
Salad dressings of your choice.
Prep the vegetables, wash and dry the greens. Layer them in ten containers starting with cucumbers, carrots, spinach and pomegranate. Add the cashews in a separate bag or box. Toss them just before you add the dressing, and combine. Devour!
