Kids Lunchbox Idea: Turkey and Cucumber Sandwiches


These little sandwiches are just the right size for little hands and just as yum for kids lunches!


For the sandwiches: makes 6 sandwiches
3 whole wheat hot dog buns
1 cucumber, peeled and cut into slices
A few teaspoons of butter at room temperature. 


For the meat filling: 
1 lb ground turkey 
1 cup onion diced
1 cup fresh or frozen peas
1/2 cup grated carrots
1/2 tsp ginger garlic paste
1 tsp yogurt or sour cream
1/2 tsp red chili/cayenne pepper powder
1/4 tsp garam masala powder
Salt to taste
2 tsp olive oil
In a thick bottom saucepan, on medium-high, add olive oil. When it shimmers, add the ground meat and fry until brown. About 3-5 minutes. 

Add in the onions and ginger garlic paste. Once the onions turn transparent, add peas and carrots. Cook until soft. Create a pit in the middle of the saucepan, by pushing the meat to the sides, so the oil accumulates in the center.  

Add the powders in the oil and fry for a minute to get rid of the raw smell of the powders. Add in the yogurt and salt. Fry again for another 3 minutes.Turn off the heat and let it cool down.


In the meantime, Open the hot dog buns. You may smear a layer of butter and toast it if you like. I just smeared butter and then arranged about 4 slices of cucumber. 

Spoon in about  to 3 teaspoons of cooled meat. Devour! If you want to pack it for a kids lunch, wrap the prepped sandwich in cling wrap and then cut the sandwich in half.
