Fresh lentil salad with cucumber, carrots and cilantro.Healthy and light in calories!
What you need: Serves 2 to 3
1/2 cup yellow lentils/Moong dal
1 medium Carrot,grated
1 medium cucumber, peeled and chopped into fine bits
2 to 4 sprigs of cilantro finely chopped
2 green chilles finely chopped
1/4 cup grated Coconut
Juice of 1/2 lemon
Salt to taste
To temper: (Optional, I prefer it without tempering)
1/2 tsp Mustard seeds
1 tsp white lentils/Urad dal
a pinch of Asafoetida
5-6 Curry leaves
1 tsp Oil
Soak moong dal for 2 hours and drain off the excess water.
In a bowl add the soaked moong cilantro, chillies and carrot. Stir them all together.
You can let this salad chill for a few hours before it is served.
In a small pan heat oil and crackle mustard seeds and add urad dal and fry until it turns light brown.
Add curry leaves and asafoetida and fry for few more seconds.
Add the seasoning to the mixed salad and mix it nicely.
Just before serving, add salt and lemon juice. Serve. Enjoy!
