Spinach seekh kebabs

These mini kebabs are awesome as appetizers for a crowd, and kids love them! Seekh Kebabs are basically ground meat seasoned and spiced, wrapped around a skewer and grilled. There are many different types of kebabs.


What you need: Serves 4-6 as appetizer
1 lb ground meat lamb or pork
1 lb ground chicken/turkey
2 eggs
1 cup whole wheat bread crumbs
2 cups fresh spinach, finely chopped
2 cups red onion finely chopped
1 tsp of ginger paste
1 tsp garlic paste
6 or 8 green hot Thai chilies, finely chopped
1 Tbsp of olive oil
1/2 tsp pepper powder
1/4 tsp turmeric
4 tsp lime juice
Salt to taste
12-15 bamboo skewers, soaked in water for an hour or two.
I used a combination of medium skewers and bamboo tooth picks.



In a large mixing bowl, add in the above ingredients. Mix well and divide the mixture into 12 or 15 balls. Holding the skewer in one hand, and the meat all in the other, wrap the meat on it, to resemble a sausage. Place the meat skewers on a greased foil placed on a baking sheet. Refrigerate for about 30 minutes, or until they are ready to grill.

You may cook them on a BBQ grill, or in the oven  on broil mode. Preheat the oven at 400 degree F for about 10 minutes prior to placing the kebabs

Broil the skewers for about 18-22 minutes, rotating them at half time. The thinner the meat on the skewer, the faster they cook, so watch them! When they are golden brown and shining, they are ready to devour as an appetizer, or go great in a wrap. Enjoy!
