Mixed berry muffins

These warm and sweet muffins make an awesome, wholesome breakfast.


What you need: Makes 12 muffins
1 and 1/2 cups whole wheat flour
1/2 cup sugar
pinch of salt  
1/2 cup butter, at room temperature
1 cup mixed, fresh or frozen berries
2 eggs
1/2 tsp vanilla extract
1/3 cup milk
1 tsp baking powder


Preheat oven to 375 degrees F. Line the muffin pans with muffin liners. Sift the flour, salt and baking powder together, set aside.


Gently combine butter and sugar until creamy. Add the eggs one at a time while beating on low speed. Add in the flour mixture alternating with milk, a little at a time. Mix to combine. 



Toss in the berries and gently stir them all together with a spatula. Scoop spoonfuls into the muffin pans. Fill the muffin liners half way full.

Bake for 16 to 18 to minutes, or until a wooden/metal skewer inserted in the middle of the muffin comes out clean. Let it cool down until warm to touch. Dive in :-). Enjoy!

hey thanks so much for this recipe reshma! is there anyway I can make this with blueberry jam? its difficult to find berries in bangalore. what happens when i pit jam is it just sinks to the bottom turns out to be a topping on the cake (atleast what i tried)

Hi Shilpa, How have u been? You can substitute the recipe with jam. Swap out the milk with 1/3 cup thick yogurt, so the batter is not runny. Stir the jam well for easy use. Follow the recipe, and add the batter into greased muffin pans half way, stir in 1/2 a spoon of jam, and top it with some more batter. Bake the same way. Let the muffins cool down well, before you can dig in. Enjoy!
