Very berry parfait

This is a simple and yummy parfait. A really light and cool dessert. If you prefer a low-cal option, skip the cream cheese and whip cream. 

What you need: serves 4
2 cups fresh or frozen berries (raspberries, blueberries, strawberries)
1 tsp cornstarch
1/2 cup honey
2 cups greek yogurt or plain yogurt

2 cups of raspberry yogurt
1/2 cup cream cheese
1/2 cup whipping cream
2 tsp icing sugar
1 cup fresh berries
1 cup of granola (homemade almond and honey granola will be posted soon, stay tuned)


Heat a saucepan on medium heat. Pour in 2 cups of frozen berries. Cook it till it is pulpy. Add in the honey and stir. Mix the cornstarch with 1/2 a cup of cold water and stir to get rid of the lumps. Pour it into the bubbling mixture and stir. Once the berry mixture is thick, turn it off and let it cool to room temperature. Our berry filling is ready to use. 

In a stand mixer, whip the cream cheese, yogurt and cream together on low until it is light and foamy, about 3 to 5 minutes. Add in the icing sugar and continue to whip until it forms soft peaks.

Line up 4 parfait cups. Spoon the base layer with 2 tablespoons of berry filling. The next layer, spoon 2 tablespoons of yogurt into each cup. Top the white layer with a pink layer of raspberry berry. Arrange a layer of fresh cut berries and a touch of granola. Wrap the cups with cling wrap and chill until they are ready to devour. Enjoy!
