Steamed white cakes - or white dhoklas

Here are healthy, nutritious and 100% vegetarian steamed cakes or dhoklas. You can make these dhoklas with rice or cream of wheat(rava/semolina).

What you need: Makes about 40 little cakes
1 cup fine rava/sooji / semolina. You may also use idli rava/semolina if you prefer
1 cup yogurt
1/4 cup Water
1 tsp baking soda
1 tsp lime juice
pinch of sugar
pinch of salt
1 tsp oil

Tempering :
1 green chilly finely chopped
1/4 cup fresh cilantro, finely chopped
1/2 tsp mustard seeds
1/2 tsp cumin/jeera seeds
1 Tbsp oil


In a bowl add semolina flour, salt, curd and water. Mix to form a batter. Let the batter rest for about 30 minutes.  Add in sugar, salt and lemon juice. Stir it together. Sprinkle the baking soda and a tsp of oil. the batter is ready to be poured into steaming plates. 




Grease a rimmed metal plate or baking dish. Pour the batter into the greased pan. Place the plates in a steamer or cooker. Steam it for about 10-12 minutes. When you touch it, it should have formed a spongy cake that springs back.

Cool for a few minutes before it is cut into desired shape.

Use a generous amount of tempering on it before it is served.  To make that, in a mini pan, heat oil, add in cumin and add mustard seeds. Once they splatter, Turn off the heat. Add in the green chilies and chopped cilantro leaves. These dhoklas taste divine with sweet date-tamarind chutney or mint chutney.
