Spinach, snap peas and sprouts salad

Salads can be fun. Lately, I have developed a love for salads, Crunchy, juicy, tangy and makes my mouth water just thinking of them.


Break the rules, stir in what you like, pour your favorite home made or store brought dressing, and chop chop, have it your way.. enjoy your salad.

Husband loves a ton of snap peas, and I love a ton of green and sprouts, so we build boxes the way we love them. In the end, our goal is to eat healthy :-)


What you need: makes 10 medium servings of salad
2 cups washed and drained baby spinach
2 cups romaine lettuce, chopped
2 cups cucumbers sliced
1 cup radish sliced into thin rings
1 cup carrot sliced into thin rings

1 cup mung bean sprouts
1 cup long bean sprouts
1 cup colored peppers

1 cup sunflower seeds
1 cup cherry tomatoes
1 cup croutons, homemade or store bought
1 cup snap peas
10 medium plastic boxes
Salad dressings of your choice.


Spread layers of all the vegetables the way you like it. Start with snap peas, followed by peppers, cucumbers, radishes, carrots, lettuce, spinach, tomatoes, sprouts and top it off with sunflower seeds and croutons. Seal and store in the refrigerator. Take a small separate container of dressing. Enjoy.
