Kids Lunchbox Idea: Turkey Sausage and Ginger Fried Rice

Lunch box ideas for kids.
What you need: Serves 4
3 cups rice, cooked. Day old rice works best!
2 cups turkey sausages, cooked and cut into 1/2 inch rings
1/2 tsp ginger, finely grated
1/2 tsp rice wine vinegar
1 Tbsp soy sauce
1 tsp tomato ketchup
1/4 tsp green chilies, finely chopped
1/4 tsp black pepper powder
Salt to taste
1 cup onions (julienne)
1 cup colored peppers (julienne)
1 cup carrots (julienne)

Warm up a wok or pan on medium high; add oil. When the oil begins to smoke, add the chopped chilies and ginger. After a few seconds, add the sausage rings  and onions. Cook for about two minutes. Add in the carrots and pepper julienne. Saute for about a minute on high heat.

Add the sauces, vinegar, pepper and salt. Stir for just another few minutes. Pour in the cold rice. Stir quickly for another few minutes until the sauces are blended with rice.

Turn off the heat, and serve hot. Let it cool down a bit before you add it into lunch boxes. Enjoy!
