Kids lunch: Grilled Paneer Burritos


These burritos stuffed with paneer are a healthy option for kids lunches.
Makes 4 burritos

Ingredients:
1 lb/500 gm paneer cheese cut into cubes
1 cup onion, sliced thin
1/2 tsp cumin/jeera seeds
A sprig of curry leaves
4 whole wheat chapatis or tortillas, (ready or homemade) cooked
1/2 tsp chili powder
1/4 tsp turmeric powder
1/4 tsp garam masala powder
1/2 tsp lime juice
Salt to taste
2 Tbsp olive oil


Ina  pan on medium heat, add oil. When it begins to shimmer, add in cumin and curry leaves. Once the curry leaves are crunchy, add in the onions and saute for just a minute.

Toss in the paneer cubes and saute until they brown slightly.

Add in the spices, salt and a pinch of sugar. Combine gently and let cook for 5 minutes. Turn off the heat and add lime juice. Toss to combine.

Let the mixture cool a bit. Add 2 Tbsp of paneer on to the cooked chapatis roll them tightly. Grill the rolled burritos in a  hot griddle or grill pan. Once they have grilled marks on them, remove.

Cut them diagonally in the middle and serve. Enjoy!
