Date nuts and quinoa energy bites

Quinoa dates energy bars

Protein bars/ energy bites made with dates, coconut, quinoa, oats, honey and cocoa!


Yields: About 40 squares

Ingredients
  • 1 cup cashews
  • 1 cup peanuts
  • 1 cup quinoa
  • 1 cup oats
  • 2 cups, about 20 dates, pitted
  • 1/2 cup honey
  • 1 cup dry coconut
  • 1/2 cup semi sweet cocoa powder
  • 1 tsp ghee, at room temperature
Directions: 
  1. Dry roast the cashews, peanuts, quinoa and oats n the microwave or place them all on a sheet pan and bake at 300 degree F for 15 minutes. Set aside to cool.
  2. Pulse the mixture in a processor, into a crumbly texture. Set aside.
  3. Pulse the dates and coconut in a processor until they form a crumbly dough. Add in the nuts mixture. Pulse to form a dough. Finally add honey, cocoa powder and ghee. Pulse until they all come together to form a dough.
  4. Line and grease a wax sheet lined baking pan. Press the dough flat and cut into square of desired size. Refrigerate for an hour.
  5. Store the square in an airtight container at room temperature for about 10 days. It will stay longer or in the fridge. Enjoy!
