Lately, I am obsessed with Chia seeds. Am I glad, it's not cookies or cakes for once :-)
Chia seeds, yet another super food packed with all the good stuff, omega 3, minerals, fiber, antioxidants, the list goes on. It has a fabulous texture, a little slimy on the outside and crunchy on the inside. When paired with yogurt and fruit, it makes an awesome breakfast, snack or dessert. You can make up to 4 servings at once and store in the fridge. Top it with new fruits and nuts everyday, and you have a yummy breakfast! Try it...
What you need: serves 2
1/8 cup Chia seeds
1/4 cup water
1 cup plain yogurt
1 tsp honey
2 Tbsp toasted oats
1/2 cup apple, diced
1 tsp crushed pistachios and almonds
In a bowl, gently whisk the chia seeds and water with a fork and whisk gently to get rid of lumps. Add yogurt and honey; whisk again to a smooth texture. Let stand in the fridge for 30 minutes or overnight.
Before serving, top it with fruit, toasted oats and garnish with nuts. Enjoy!
