Wholesome turkey, corn and avocado salad


A mouthwatering, colorful salad, that can be filled into tortilla scoops.


What you need: serves 4 as salad, or fills a 10 oz bag of tortilla scoop chips
1 -15 oz can of red beans
2 cups fresh or frozen corn, cooked
1 avocado, seeded, scooped and cut into medium sized bits
2 cups lettuce, washed and diced
2 cups of cooked, spicy ground meat - turkey or pork (recipe here)
1 10 oz bag or tortilla scoop chips (optional)
1 cup salsa of your choice (optional)
1 cup sour cream greek yogurt (optional)

Arrange all the salad ingredients in a large shallow plate. Serve empty bowls and ask you family members to dig in and throw what they like into their own custom salad bowls.


You may also make tiny colorful scoop chips and serve them as starters. Top them with salsa and sour cream. Enjoy!
