Apple upside down cake

This is a yummy, moist apple upside down cake. The cake is flavored with orange juice and yogurt to give it a unique flavor!




What you need: Makes 2-8 inch pans. 
 4 eggs, at room temperature
1/2 cup yogurt
1 cup butter
2 cups flour
1 tsp baking powder
1/4 tsp salt
2 Gala or Granny Smith apples, peeled and sliced into 12 pieces
3 cups sugar
1/2 tsp orange zest
2 Tbsp fresh orange juice
Confectioners' sugar to dust


Preheat the oven to 350 degrees F. Grease and flour dust 2-8 inch pans. Arrange the apple slices in them.

Combine 1 and 1/2 cups of sugar and 1/2 cup water in a small saucepan and cook over high heat until it turns a warm amber color. To this add a teaspoon of butter. Give it a quick stir and pour it over the apple slices.



Cream the butter and 1 and 1/2 cup of sugar in a bowl and beat until light and fluffy. Lower the speed and beat in the eggs 1 at a time. Add the yogurt, orange zest, and orange juice. Mix until combined. Sift together the flour, baking powder, and salt together. Add it to the egg mixture. Mix only until combined.

Pour the cake batter evenly over the apple slices in both the pans and bake for 30 to 40 minutes, until a cake tester comes out clean. Cool for 15 minutes, then invert the cake onto a flat plate. Serve warm, dusted with confectioners' sugar. Enjoy!
