Zucchini, Hot dog & Shallot Pizza


For the pizza dough: Makes two 9 inch rounds, or a large one.
1 and 1/2 cup all purpose flour
1 and 1/2 cup whole wheat flour
1 envelope, about 1 heaped tsp of active dry yeast
1 cup warm water
1 tsp sugar
1 tsp honey
1 Tbsp olive oil and some more.
1 tsp salt


If you are using a stand mixer, not a problem, if by hand, you have a lot of kneading ahead. In a cup, add warm water, honey, sugar and yeast. 


Stir together and let sit until the mixture is foamy; about 5 to 7 minutes. Using a large bowl good enough to knead, add in the flour, oil and salt. Whisk well. Now add the yeast water gradually into it and knead to form a dough.

Use the dough hook attachment in the stand mixer if you are using that. Knead until the mixture forms a smooth dough. Grease your hands with a little oil, and smear the dough down to form a ball. Place it in a bowl that's coated with oil. 


Cover it with a damp tissue or cloth. Let it sit for the next hour and a half until it doubles in size. Punch it down and knead it again.  Flour dust the work surface. Divide the dough into two parts. let it rest for 10 to 15 minutes while you prep the toppings. Flatten it out to the thickness you want. Place it on a pizza stone or pan and build the pizza.

For the topping
1/2 cup pizza sauce or marinara sauce
1 cup mozzarella cheese, grated
4 hot dogs, sliced into desired thickness
1 large zucchini, sliced into desired thickness
2 large shallots, thinly sliced
A few sprigs of cilantro
Olive oil
Salt to taste


Preheat oven to 475 degree F. Spread sauce over the dough, leaving a slight border.  Top with cheese and then zucchini slices.  Add sausage slices, shallots and cilantro evenly over the zucchini. Sprinkle salt and pepper if you like. I like it with loads of pepper.

Bake for 8 to 9 minutes or until cheese is browned and crust is golden. You may also choose to lower the temperature a bit and cook it longer. I prefer it at 475 degree F. Enjoy!
