Vegetable curries

Potato curry / Aloo sagu
This is a simple curry that complients a variety of Indian brekfast foods like idlis, dosas and pooris. It tastes great with breads too.

A South Indian vegetable curry sauteed and simmered in a curry of ground coconut and cumin.

Avarekai saaru
This is a green kidney bean curry that is cooked in a curry or red chilies, potatoes, onions and tomatoes.

Avarekai uppu saaru
yet another classic curry made with green bean kidneys that are boiled. The stock is then used as a curry with ground spices. The beans and sauteed with onions into a stir-fry.

Avarekaai / Green kidney bean and soy curry
The combination of soy chunks and green kidney beans come well in a thick spicy curry that goes well with rice or flat bread.

Bas saaru
It can also be described as a red curry made with vegetable stock blended with ground coconut and curry paste.

Bele saaru/ Dal and vegetable curry
My all time favorite, the classic lentil and vegetable curry cooked and tempered in curry powder, tangy tamarind, mustard seeds and curry leaves.

Corn and Potato sagu
A sunny blend of potatoes, corn and turmeric in a curry that is tempered with spicy green chilies.

Chili cream paneer and peas curry
Indian cheese, green chilies and peas are a great combination when they are blended together in curry and topped off with cream to cut the heat and give it a smooth texture.

Enne Badhanekai - Stuffed eggplant curry
Tiny purple egg plants stuffed with curry masala, and fried in oil. Then immersed in more curry for added flavor, yum!

Jeerge menasu rasam - Jeera pepper soup
A soup made with fresh toasted and ground cumina nd pepper seeds, then tempered into a thin lentil stock. A touch of turmaric and tamarind makes this soup a great soother for sore throats and blends well with soft cooked rice.

Haal saru - Vegetable and milk curry
This is a unque curry that is made with whole mentils/beans, and/or vegetables. The vegetable mixture is cooked with chili paste, and then topped off with milk just before serving. Just the right combination to healthy living.

Hesarakalu huli (Green gram curry)
Whole green grams are toasted and cooked with a couple of vegetables and simmered in curry paste.

Kasi soppina haal saaru (Greens, lentils and milk curry)
This is a deep green leaf that is boiled and ground to a paste with chilies and spices to form a rich curry. You can diversify the texture and flavor by adding vegetables or whole lentils of your choice.

Kadale kalu huli (Channa sprout curry)
Whole channa with skin is soaked and cooked with potatoes, onions and tomtaoes, then simmered in curry paste, and topped off with a tempering of curry leaves and mustard seeds.

Cabbage Kootu - Cabbage curry in spices and lentils
A simple curry made with finely chopped cabbage and lantils and tempred with curry leaves and mustard seeds in clarified butter

Vegetable Kootu - Vegetable curry in spices and lentils
This is a wholesome vegetable curry that is cooked with lentils and tempered with spices.

Massoppu saaru (Greens/spinach and lentils in curry)
Dice your green and vegetables, throw them in with lentls and cook. Then temper it with chilies and fresh crushed garlic. A flavorful curry.

Soppu saaru (Spinach, chillies and lentil in curry )
Greens and lentils cooked and ground with garlic and chillies to blend together in a fine rich curry.

Tomato gojju - tomatoes and onions cooked into a relish
This can be made as thin or as thick as you would like it to be. The thinner runny versions are best used with a few days. The latter can be stored for upto a week or more if stored well.

Bendekay menthye masala - Okra and Fenugreek leaves curry
Okra sauteed and immersed in a bubbling curry of fragrant fenugreek masala curry. A wonderful combination.

Anabe batani gojju - Mushroom and peas in curry
Mushrooms and peas cooked with a ground masala paste.

Kempu soppu saaru ( lentil and spinach/greenscurry)
Yet another greens curry , but this one is made with curry powder instead of raw or dried chilies.

Menthye soppu panner gojju - Methi Paneer curry
Indian cheese cooked in a bubbling mixture of fenugreek and whole ground spices.

Anabe gojju - Mushroom in a masala curry
A creamy mushroom and vegetable curry made with whole ground spices and coconut milk

Eerulli saru - Pearl onions in tamarind curry
Tiny pearl onions combined in a curry made with tamarind and curry powder, a very simple and mouthwatering dish that tastes best with soft cooked rice and a dollop of clarified butter.

Okra sauted and thrown into a simmering mixture of ground masala and red chilies.

Rich plum preserves

This is an easy plum preserve recipe, ruby rich, pulpy and full of Vitamin C.

What you need: Makes about 4 to 5 cups
4 cups ripe plums
2 tsp lemon juice
4 cups sugar, measured into separate bowl
1/2 tsp. butter or margarine (optional)
1/2 pouch Pectin - about 2 tsp
4-8oz jars and lids

Wash the jars with soapy water and rinse in warm water.
In a large hollow container, boil water, and immerse all the jars and lids to simmer.
Wash plums seed them. Cut the fleshy fruit into chunks of desired size. I used thick slices. Pour them into a large sauce pot. Let it cook for about 5 to 7 minutes on medium high until them become soft and pulpy. Add the lemon juice and crush them down lightly or thoroughly as you would like to have.

Add the sugar and stir until it dissolves and begins to a rolling boil. Boiling that will not stop when stirred. At this point, the fruit puree should be foaming. Add in the butter. This will bring down the foam. If you have any more foam left, skim it off with a ladle.
Mix pectin into a little cup and pour in a few teaspoons of cold water to completely dissolve it. Pour it into the boiling jam and let it boil for a good minute. 

Remove the warm glass jars from the water bath and pour jam with the help of a funnel. Leave about 1/8th of an inch from the lid line. Cover all the jars with lids and tighten them. Clean them with a damp cloth and return them into a water bath. This time the water around the filled jars must be 2 to 3 inches. Let it simmer for 10 to 15 minutes.

Remove and store them in a  cool place. The lids will begin to pop, ensuring they are vacuum sealed. This process of lid popping will go on for about 24 hours. If they do not pop, they may need to be refrigerated to preserve freshness. Enjoy!

Alive and kickin green cupcakes

Here are some fun cupcakes to cherish the long summer we had here in the Northwest. The ocean waters were warm and the sun rays kissed the brown laws into lush green pastures. All we can do now is look at the gray clouds that hover over Seattle for another long fall and winter. It is sad to see my plants shrinking down as they brace the changing weather on the patio. Before long they will need to start adjusting to the heater in the living room.  These green cupcakes are to remind you of them and bring a smile to your face.
