Paneer/Tofu tikka

What I used: Makes 8-12 skewers
1lb paneer diced to cubes (Vegans, substitute this ingredient with tofu)
Vegetables diced to large chunks: 1 large green/colored pepper , 1 large tomato, 1 large onion
Marinade:
1tsp ajwain seeds
1Tbsp gram flour
¼ cup yogurt (Vegans, eliminate this ingredient and add 1 tsp more lime juice)
½ tsp lime juice
½ tsp chili powder(less or more as you need)
¼ tsp turmeric
¼ tsp garam masala powder
1tsp ginger garlic paste
3tsp oil
Add a little oil into a small shallow pan. To this, add 1Tbsp gram flour, cook on medium flame, and turn off, continue stirring the gram flour, to prevent lumps.

Now, in a bowl, add the ingredients mentioned under marinate.  Pour in the roasted gram flour. Whisk it all with 1tsp oil. Add the paneer cubes. Soak for 2-3 hours.


Poke them on to a skewer. Alternate the paneer with the diced vegetables (pepper, onion, tomato. Bake on a greased sheet at 425F for 10 minutes. Baste it with oil. Now keep it on the top rack and broil it for another 5 minutes.  
Tip: When using skewer sticks, soak them in water for 30 minutes. That way they won’t char in the oven or on the grill. You may add chunks of whole corn, baby potatoes, pineapple and even peaches if you like!
